Boat Dip (Rotel Ranch Dip)

Creamy, zesty, and packed with a little Tex-Mex kick, this easy no-bake dip is the ultimate party snack! Ready in minutes, perfect for chips, veggies, or piling onto tacos.


🍴 Ingredients

  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix (about 1 oz)
  • 1/2 cup diced green onions
  • 1/2 cup cooked crumbled bacon (optional for extra flavor)
  • 1 cup cooked shredded chicken (optional for a hearty dip)

👩‍🍳 Instructions

Make the Dip:

In a large bowl, combine the sour cream and ranch seasoning mix until smooth.
Stir in the drained Rotel, shredded cheddar, and green onions.
If using, fold in the crumbled bacon and/or shredded chicken.

Mix until everything is well combined.

Chill:

Refrigerate for at least 30 minutes to let the flavors blend (if you have time — otherwise, it’s delicious right away too!).


✨ To Serve:

Serve cold with tortilla chips, crackers, pita chips, or fresh veggie sticks.
Garnish with extra green onions or a sprinkle of cheese if you’re feeling fancy!
