Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Prepare the crust: In a medium bowl, whisk together Parmesan cheese, panko bread crumbs, garlic powder, onion powder, dried oregano, and dried basil.
  3. In a separate small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and minced garlic.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined. Season with salt and freshly ground black pepper to taste.
  5. Prepare the fish: Pat the fish fillets dry with paper towels. Lightly season both sides of the fish fillets with salt and freshly ground black pepper.
  6. Place the fish fillets on the prepared baking sheet, leaving a little space between each fillet.
  7. Apply crust and bake: Evenly spread the Parmesan cheese mixture over the top of each fish fillet. Drizzle the fish fillets with olive oil.
  8. Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown. The fish is done when it flakes easily with a fork.
  9. Serve: Let the fish rest for a few minutes before serving. Garnish with fresh parsley, if desired. Serve immediately with lemon wedges.
