Flaky white fish baked with a flavorful, crispy Parmesan crust. A quick and easy weeknight dinner that’s sure to impress!

- 1.5 pounds white fish fillets (cod, halibut, or tilapia work well), about 1 inch thick
- 1/2 cup grated Parmesan cheese, finely grated
- 1/4 cup panko bread crumbs
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice, freshly squeezed
- 1 clove garlic, minced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- Lemon wedges, for serving (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
- Prepare the crust: In a medium bowl, whisk together Parmesan cheese, panko bread crumbs, garlic powder, onion powder, dried oregano, and dried basil.
- In a separate small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, and minced garlic.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is well combined. Season with salt and freshly ground black pepper to taste.
- Prepare the fish: Pat the fish fillets dry with paper towels. Lightly season both sides of the fish fillets with salt and freshly ground black pepper.
- Place the fish fillets on the prepared baking sheet, leaving a little space between each fillet.
- Apply crust and bake: Evenly spread the Parmesan cheese mixture over the top of each fish fillet. Drizzle the fish fillets with olive oil.
- Bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and the crust is golden brown. The fish is done when it flakes easily with a fork.
- Serve: Let the fish rest for a few minutes before serving. Garnish with fresh parsley, if desired. Serve immediately with lemon wedges.
Notes
- Fish Type: Cod, halibut, tilapia, or haddock all work well.
- Cheese Substitution: Pecorino Romano or Asiago can be used in place of Parmesan.
- Bread Crumbs: Regular bread crumbs can be used if panko is unavailable.
- Herb Variations: Add a pinch of red pepper flakes for heat, or use thyme or rosemary.
- Lemon Zest: Add a teaspoon of lemon zest to the Parmesan crust for extra citrus flavor.
- Garlic: Add an extra clove or two of minced garlic to the Parmesan crust.
- Gluten-Free: Use gluten-free panko bread crumbs.
- Air Fryer: Preheat air fryer to 400°F (200°C). Cook for 8-10 minutes.
