Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or your preferred keto-friendly sweetener)
  • 1/4 cup coconut oil, melted
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsweetened almond milk (or other keto-friendly milk)
  • Optional toppings: unsweetened shredded coconut, chopped nuts, sugar-free chocolate chips

Instructions

  1. Combine Dry Ingredients: In a medium bowl, whisk together almond flour, cocoa powder, erythritol, and salt.
  2. Add Wet Ingredients: Pour in melted coconut oil, almond butter, vanilla extract, and almond milk. Mix until a smooth, slightly sticky dough forms. If too dry, add almond milk 1 teaspoon at a time. If too wet, add almond flour 1 tablespoon at a time.
  3. Chill Dough: Cover and refrigerate for at least 30 minutes.
  4. Preheat (Optional): If baking, preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop and Roll: Scoop 1 tablespoon of dough at a time and roll into small balls.
  6. Place on Baking Sheet/Tray: Place balls on prepared baking sheet or tray.
  7. Optional: Flatten Slightly: Gently press down on each ball with the back of a spoon or your fingers.
  8. Bake for 8-10 minutes, until slightly firm.
  9. Cool completely on the baking sheet.
  10. Chill in the refrigerator for at least 30 minutes to firm up.
  11. Add Toppings (Optional): While still slightly warm (if baked) or right after chilling (if no-bake), gently press desired toppings onto the surface of each bite.
  12. Chill Again (If Toppings Added): Place back in the refrigerator for 15-20 minutes to allow toppings to adhere.
  13. Store: Store in an airtight container in the refrigerator for up to a week, or freeze for up to a month.
