- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
- 3/4 cup cold buttermilk
- 4 ounces cooked ham, diced
- 4 ounces cheddar cheese, shredded
- 2 tablespoons melted butter, for brushing
- Optional: 1 tablespoon chopped fresh chives or parsley, for garnish
Instructions
- Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cut in the Butter: Add the cold butter to the flour mixture. Using a pastry blender or fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
- Add the Buttermilk: Gradually pour in the cold buttermilk, stirring gently with a fork until just combined. Be careful not to overmix the dough.
- Incorporate Ham and Cheese: Gently fold in the diced ham and shredded cheddar cheese until evenly distributed.
- Turn Out and Knead Lightly: Lightly flour a clean work surface. Turn the dough out onto the floured surface. Gently pat the dough into a 1-inch thick rectangle. Knead the dough very lightly – only about 3-4 times – just enough to bring it together.
- Cut Out the Biscuits: Using a 2-inch biscuit cutter (or a sharp knife), cut out the biscuits. Press straight down and avoid twisting the cutter. Re-roll the scraps of dough to cut out more biscuits.
- Arrange on Baking Sheet: Place the biscuits onto an ungreased baking sheet, spacing them about 1 inch apart.
- Brush with Melted Butter: Brush the tops of the biscuits with the melted butter.
- Bake: Bake in a preheated oven at 425°F (220°C) for 15-20 minutes, or until the biscuits are golden brown and cooked through.
- Cool Slightly and Serve: Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before serving. Garnish with chopped fresh chives or parsley, if desired.
