Description
Light, airy, low-carb cloud bread made with cottage cheese and eggs. A simple, delicious bread alternative.
Ingredients
- Cottage Cheese: 1 cup (full-fat, small curd recommended)
- Eggs: 3 large, separated
- Cream of Tartar: 1/4 teaspoon
- Optional Sweetener: 1-2 tablespoons (erythritol, stevia, or your preferred sugar substitute)
- Optional Flavorings: 1/2 teaspoon vanilla extract, almond extract, or citrus zest (lemon or orange)
- Optional Spices: 1/4 teaspoon cinnamon, nutmeg, or pumpkin pie spice
Instructions
- Separate the Eggs: Separate the eggs, ensuring no yolk gets into the whites.
- Chill Whites (Optional): Chill egg whites for 15-20 minutes.
- Whip Egg Whites: In a clean, dry bowl, whip egg whites with cream of tartar on medium speed.
- Increase Speed: Gradually increase speed to high until stiff, glossy peaks form.
- Test for Stiff Peaks: Peaks should stand straight up or slightly curl.
- Drain Cottage Cheese (If Necessary): Drain cottage cheese if watery.
- Blend Cottage Cheese: Blend cottage cheese until smooth in a food processor or blender.
- Add Sweetener/Flavorings (Optional): Add sweetener and flavorings to the blended cottage cheese.
- Fold in Cottage Cheese Mixture: Gently fold 1/3 of the whipped egg whites into the cottage cheese mixture.
- Continue Folding: Gently fold in the remaining egg whites in two additions, being careful not to deflate.
- Don’t Overmix: Stop folding when just incorporated.
- Preheat Oven: Preheat oven to 300°F (150°C).
- Prepare Baking Sheet: Line a baking sheet with parchment paper.
- Spoon Mixture: Spoon mixture onto the baking sheet, forming small mounds.
- Shape Mounds (Optional): Smooth the tops of the mounds with a spoon.
- Bake: Bake for 25-35 minutes, or until lightly golden brown and set.
- Check for Doneness: Press the top; it should feel firm and spring back.
- Cool Completely: Cool completely on the baking sheet.
- Serve Immediately or Store: Serve fresh or store in the refrigerator for up to 3 days.
- Reheating (Optional): Reheat in a toaster oven or microwave.
