- 2 tablespoons granulated sugar

- 1/2 cup fresh blueberries (or frozen, thawed and patted dry)
- Optional: Powdered sugar for dusting
Instructions
- Separate Eggs: Carefully separate egg whites from yolks. Place whites in a large, clean, dry bowl. Place yolks in a separate bowl.
- Whip Egg Whites: Add cream of tartar to egg whites. Using an electric mixer, whip on medium speed, gradually increasing to high.
- Add Sugar: Once soft peaks form, gradually add sugar, one tablespoon at a time, while whipping.
- Whip to Stiff Peaks: Continue whipping until stiff, glossy peaks form (5-7 minutes).
- Combine Cottage Cheese and Yolks: In the bowl with the egg yolks, add the cottage cheese and vanilla extract.
- Blend Until Smooth: Use an immersion blender or regular blender to blend the cottage cheese mixture until it is completely smooth.
- Fold in Cottage Cheese Mixture: Gently fold the cottage cheese mixture into the whipped egg whites in three additions, being careful not to overmix.
- Fold in Blueberries: Gently fold in the blueberries.
- Preheat Oven: Preheat oven to 300°F (150°C).
- Prepare Baking Sheet: Line a baking sheet with parchment paper.
- Spoon Batter: Gently spoon batter onto the baking sheet, forming one large or several smaller cloud breads.
- Shape (Optional): Gently shape the batter with a spatula.
- Bake: Bake for 25-30 minutes, or until lightly golden brown and set.
- Cool Completely: Turn off the oven, crack the door, and let the cloud bread cool completely in the oven (about an hour).
- Dust and Serve: Dust with powdered sugar (optional) and serve immediately.
