Instructions
- Thaw the Hash Browns: If using frozen hash browns, let them thaw for about 15-20 minutes.
- Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add diced onions and bell peppers, sauté for 3-4 minutes until soft.
- Add the Hash Browns: Add the thawed hash browns to the skillet, spreading them evenly. Cook without stirring for 5-7 minutes until crispy, then flip and cook for another 5 minutes. Season with salt and pepper.
- Whisk the Eggs: In a medium bowl, crack the eggs and whisk until combined. Season with salt and pepper.
- Cook the Eggs: In a separate non-stick skillet, heat the remaining tablespoon of olive oil or butter over medium heat. Pour in the whisked eggs and cook undisturbed for 2-3 minutes until edges set.
- Add Fillings: Once the eggs are mostly set, sprinkle the sautéed hash browns, cheddar cheese, diced tomatoes, and crumbled bacon or sausage over one half of the omelet.
- Fold the Omelet: Carefully fold the other half of the omelet over the fillings. Cook for another 2-3 minutes until cheese melts and eggs are fully cooked.
- Plate the Omelet: Slide the omelet onto a plate, cutting it in half or leaving it whole.
- Garnish: Sprinkle chopped green onions on top for garnish.
