  • 2 3/4 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Chocolate shavings or fresh fruit for garnish (optional)

Instructions

  1. In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt until well combined.
  2. Gradually whisk in the whole milk until smooth.
  3. Place the saucepan over medium heat, stirring continuously to prevent sticking.
  4. Continue stirring until the mixture thickens and reaches a gentle boil. Boil for an additional 2 minutes.
  5. In a separate bowl, lightly beat the egg yolks. Slowly add about a cup of the hot milk mixture to the yolks while whisking constantly.
  6. Pour the tempered egg yolk mixture back into the saucepan and stir well.
  7. Return to heat and cook for another 2-3 minutes until thickened and bubbling.
  8. Remove from heat and stir in the unsalted butter and 2 teaspoons of vanilla extract until melted.
  9. Transfer to a bowl, cover with plastic wrap pressed onto the surface, and refrigerate for at least 2 hours.
  10. Chill your mixing bowl and beaters in the freezer for 10-15 minutes.
  11. In the chilled bowl, pour in the heavy whipping cream and mix on low, gradually increasing to medium-high speed.
  12. Once thickened, add powdered sugar and 1 teaspoon of vanilla extract. Whip until soft peaks form.
  13. Pre-bake the pie crust according to package instructions or your recipe, then cool completely.
  14. Pour the cooled vanilla cream filling into the pie crust and spread evenly.
  15. Spoon the whipped cream over the filling and spread evenly.
  16. Optionally, sprinkle with chocolate shavings or fresh fruit.
  17. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
