- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled taco meat (beef, turkey, or chicken)
- 1/2 cup salsa
- 1/4 cup chopped green onions
- 1/4 cup black olives, sliced
- 1 tsp taco seasoning
- 4 large flour tortillas (10-inch size)
- Fresh cilantro, for garnish (optional)
Instructions
- In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Use a hand mixer or spatula to mix until well combined and creamy.
- Add the cooked and crumbled taco meat to the cheese mixture. Ensure the meat is cooled if using leftovers to prevent melting the cream cheese.
- Pour in the salsa and stir until evenly mixed.
- Add the chopped green onions, sliced black olives, and taco seasoning. Mix again until all ingredients are well incorporated.
- Lay one flour tortilla flat on a clean surface or cutting board.
- Spread a generous amount of the filling mixture over the entire surface of the tortilla, leaving about a half-inch border around the edges.
- Roll the tortilla tightly from one end, tucking in the sides as you go to keep the filling inside.
- Place the rolled tortilla seam-side down on the cutting board. Repeat with the remaining tortillas and filling.
- Wrap each rolled tortilla tightly in plastic wrap to keep them fresh and maintain their shape.
- Place the wrapped pinwheels in the refrigerator for at least 30 minutes, or longer if possible.
- Remove the pinwheels from the refrigerator and unwrap them. Using a sharp knife, slice each roll into 1-inch thick pieces, wiping the knife with a damp cloth between cuts for clean edges.
- Arrange the sliced pinwheels on a serving platter and garnish with fresh cilantro if desired.
- Serve with additional salsa or guacamole on the side for dipping.
