Ingredients

Scale
  • 8 oz (225g) rice noodles
  • 1 lb (450g) beef sirloin, thinly sliced
  • 2 tablespoons vegetable oil (divided)
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Sesame seeds for garnish

Instructions

  1. Boil a large pot of water. Add the rice noodles and cook according to package instructions (4-6 minutes) until al dente. Drain and rinse under cold water. Set aside.
  2. In a medium bowl, combine sliced beef with 1 tablespoon soy sauce, 1 tablespoon cornstarch, and 1 tablespoon vegetable oil. Mix well and let marinate for at least 15 minutes (up to 1 hour for more flavor).
  3. In a small bowl, whisk together remaining soy sauce, oyster sauce, hoisin sauce, sesame oil, brown sugar, black pepper, and red pepper flakes (if using). Set aside.
  4. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon vegetable oil. Add marinated beef in a single layer (cook in batches if necessary). Sear for 2-3 minutes on each side until browned and cooked through. Remove from skillet and set aside.
  5. In the same skillet, add more oil if needed. Add minced garlic and grated ginger, stirring for 30 seconds until fragrant. Add red bell pepper, broccoli, and carrot. Stir-fry for 4-5 minutes until tender but crisp. Add chopped green onions and stir for another minute.
  6. Return cooked beef to the skillet with vegetables. Pour prepared sauce over the mixture and toss to coat. Add cooked rice noodles and gently toss to combine, heating through for 2-3 minutes.
  7. Taste and adjust seasoning if necessary. Remove from heat.
  8. Serve hot, garnished with sesame seeds and additional chopped green onions if desired. Enjoy!
