  • 1 lb sirloin steak, cut into strips
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
  2. Add the fettuccine pasta to the boiling water. Cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
  3. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
  4. Season the sirloin steak strips generously with salt and pepper.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  6. Add the steak strips in a single layer. Sear for 2-3 minutes without moving, then flip and cook for another 2-3 minutes until browned and cooked to your desired doneness.
  7. Remove the steak from the skillet and cover loosely with aluminum foil to keep warm.
  8. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  9. Pour in 1 cup of heavy cream, stirring to combine. Simmer gently for 2-3 minutes until slightly thickened.
  10. Gradually add 1 cup of grated Parmesan cheese, stirring until melted and creamy. Adjust consistency with reserved pasta water if needed.
  11. Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper.
  12. Toss the drained fettuccine in the sauce until well coated.
  13. Slice the rested steak into bite-sized pieces and add back to the skillet. Toss gently to combine.
  14. Remove from heat and sprinkle with extra Parmesan cheese if desired.
  15. Twirl the pasta onto plates or into bowls, ensuring each serving has steak.
  16. Sprinkle with freshly chopped parsley for color and freshness.
  17. Serve immediately while hot, paired with a side salad or crusty bread.
