- 8 oz fettuccine pasta
- 1 lb sirloin steak, cut into strips
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
- Add the fettuccine pasta to the boiling water. Cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
- Reserve about 1 cup of pasta water, then drain the pasta and set aside.
- Season the sirloin steak strips generously with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the steak strips in a single layer. Sear for 2-3 minutes without moving, then flip and cook for another 2-3 minutes until browned and cooked to your desired doneness.
- Remove the steak from the skillet and cover loosely with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Pour in 1 cup of heavy cream, stirring to combine. Simmer gently for 2-3 minutes until slightly thickened.
- Gradually add 1 cup of grated Parmesan cheese, stirring until melted and creamy. Adjust consistency with reserved pasta water if needed.
- Stir in 1 teaspoon of Italian seasoning and adjust seasoning with salt and pepper.
- Toss the drained fettuccine in the sauce until well coated.
- Slice the rested steak into bite-sized pieces and add back to the skillet. Toss gently to combine.
- Remove from heat and sprinkle with extra Parmesan cheese if desired.
- Twirl the pasta onto plates or into bowls, ensuring each serving has steak.
- Sprinkle with freshly chopped parsley for color and freshness.
- Serve immediately while hot, paired with a side salad or crusty bread.
