- 1 pound ground beef
- 1/4 cup green onions, finely chopped

- 1 tablespoon sesame oil
- 1 tablespoon chili paste (adjust to taste)
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/4 cup cilantro, chopped (optional)
- 2 tablespoons vegetable oil (for frying)
- 1/2 cup water (for steaming)
- 1/4 cup soy sauce (for dipping sauce)
- 1 tablespoon rice vinegar
- 1 teaspoon chili oil (optional)
- 1 teaspoon sesame seeds (for garnish)
Instructions
- In a large mixing bowl, combine the all-purpose flour and salt. Mix until well combined.
- Gradually pour in the boiling water while stirring with a fork or chopsticks. Be careful, as the water is hot!
- Once the mixture starts to come together, use your hands to knead the dough in the bowl until it forms a rough ball.
- Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
- Wrap the dough in plastic wrap or cover with a damp cloth and let it rest for at least 30 minutes.
- In a large mixing bowl, add the ground beef.
- Add the finely chopped green onions, minced garlic, and grated ginger.
- Pour in the soy sauce, sesame oil, and chili paste. Adjust the chili paste to your taste.
- Add the sugar and black pepper, and toss in the cilantro if using.
- Mix everything together until well combined. Cook a small spoonful to check the seasoning and adjust if necessary.
- After the dough has rested, divide it into two equal portions. Keep one covered while working with the other.
- Roll out the first portion into a long log, about 1 inch in diameter.
- Cut the log into small pieces, about 1 inch each (12-15 pieces).
- Flatten one piece of dough and roll it out into a circle, about 3 inches in diameter.
- Place about 1 tablespoon of filling in the center of the dough circle.
- Fold the dough over the filling to create a half-moon shape and pinch the edges to seal, ensuring no air pockets remain.
- Repeat with the remaining dough and filling until all dumplings are assembled.
- Heat the vegetable oil in a large skillet over medium heat.
- Place the dumplings in the skillet and fry for about 2-3 minutes until the bottoms are golden brown.
- Carefully add the water to the skillet and cover immediately. Allow the dumplings to steam for about 5-7 minutes until cooked through.
- Remove the lid and let any remaining water evaporate. Serve hot with the dipping sauce.
Notes
- You can freeze uncooked dumplings for later use. Just place them on a baking sheet to freeze individually before transferring to a freezer bag.
