- 1/4 cup milk

- 1 cup cooked sausage, crumbled
- 6 large flour tortillas (10-inch size)
- 2 tablespoons butter

Instructions
- In a large mixing bowl, crack the 6 large eggs. Use a whisk to break up the yolks and mix everything together smoothly.
- Add 1/4 cup of milk to the eggs for fluffiness and creaminess.
- Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste.
- Whisk the egg mixture until well combined and slightly frothy (about 1-2 minutes).
- In a skillet over medium heat, add the crumbled sausage. Cook until browned and fully cooked (about 5-7 minutes).
- Remove the sausage from the skillet and place it on a paper towel-lined plate to drain excess grease. Set aside.
- In the same skillet, reduce heat to medium-low and add 1 tablespoon of butter. Allow it to melt and coat the skillet.
- Pour the egg mixture into the skillet. Let it sit for a few seconds to set slightly.
- Gently stir the eggs with a spatula, pushing from the edges toward the center until mostly cooked but still slightly runny (about 3-4 minutes).
- Sprinkle in the shredded cheddar cheese and cooked sausage. Gently fold until cheese is melted and eggs are fully cooked. Remove from heat.
- Lay out the 6 large flour tortillas on a clean surface.
- Evenly distribute the egg, sausage, and cheese mixture onto the center of each tortilla (about 1/3 to 1/2 cup of filling per tortilla).
- Fold in the sides of the tortilla over the filling, then roll tightly from the bottom to the top, securing the filling inside.
- Repeat for all tortillas until you have 6 roll-ups.
- In the same skillet, add the remaining 1 tablespoon of butter and heat over medium heat.
- Once melted and bubbling, place the roll-ups seam side down in the skillet (in batches if necessary).
- Cook for about 2-3 minutes on each side until golden brown and crispy. Use tongs to flip carefully.
- Remove from skillet and place on a plate lined with paper towels to absorb excess butter.
- Slice each roll-up in half diagonally for presentation. Serve warm, perfect for breakfast or brunch!
- Serve with salsa or hot sauce on the side for dipping if desired.
