These Breakfast Roll-Ups are a delicious and satisfying way to kickstart your day. Filled with fluffy scrambled eggs, savory sausage, and melted cheddar cheese, all wrapped in a warm tortilla, they are easy to make and perfect for breakfast or brunch.   • 1/4 cup milk

  • 1 cup shredded cheddar cheese
  • 1 cup cooked sausage, crumbled
  • 6 large flour tortillas (10-inch size)
  • 2 tablespoons butter
  • Optional: salsa or hot sauce for serving

Instructions

  1. In a large mixing bowl, crack the 6 large eggs. Use a whisk to break up the yolks and mix everything together smoothly.
  2. Add 1/4 cup of milk to the eggs for fluffiness and creaminess.
  3. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Adjust seasoning to taste.
  4. Whisk the egg mixture until well combined and slightly frothy (about 1-2 minutes).
  5. In a skillet over medium heat, add the crumbled sausage. Cook until browned and fully cooked (about 5-7 minutes).
  6. Remove the sausage from the skillet and place it on a paper towel-lined plate to drain excess grease. Set aside.
  7. In the same skillet, reduce heat to medium-low and add 1 tablespoon of butter. Allow it to melt and coat the skillet.
  8. Pour the egg mixture into the skillet. Let it sit for a few seconds to set slightly.
  9. Gently stir the eggs with a spatula, pushing from the edges toward the center until mostly cooked but still slightly runny (about 3-4 minutes).
  10. Sprinkle in the shredded cheddar cheese and cooked sausage. Gently fold until cheese is melted and eggs are fully cooked. Remove from heat.
  11. Lay out the 6 large flour tortillas on a clean surface.
  12. Evenly distribute the egg, sausage, and cheese mixture onto the center of each tortilla (about 1/3 to 1/2 cup of filling per tortilla).
  13. Fold in the sides of the tortilla over the filling, then roll tightly from the bottom to the top, securing the filling inside.
  14. Repeat for all tortillas until you have 6 roll-ups.
  15. In the same skillet, add the remaining 1 tablespoon of butter and heat over medium heat.
  16. Once melted and bubbling, place the roll-ups seam side down in the skillet (in batches if necessary).
  17. Cook for about 2-3 minutes on each side until golden brown and crispy. Use tongs to flip carefully.
  18. Remove from skillet and place on a plate lined with paper towels to absorb excess butter.
  19. Slice each roll-up in half diagonally for presentation. Serve warm, perfect for breakfast or brunch!
