2 medium-sized beets, peeled and chopped
2 medium-sized apples, cored and chopped
3 medium-sized carrots, peeled and chopped
1-inch piece of fresh ginger, peeled
1 tablespoon of lemon juice
2 cups of cold water
Ice cubes (optional)
Fresh mint leaves (for garnish, optional)
Instructions
Wash all produce thoroughly under running water. Peel the beets and carrots using a vegetable peeler.
Chop the beets, apples, and carrots into 1-inch chunks for easier processing.
Peel the ginger using a spoon or peeler and chop it into smaller pieces.
Set up your juicer or high-speed blender according to the manufacturer’s instructions.
Feed the chopped beets into the juicer, alternating with apples, carrots, and ginger for smooth processing.
In a blender, combine the chopped ingredients with 2 cups of cold water. Blend on high speed until smooth, scraping down the sides as needed.
Strain the blended mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing down on the pulp to extract as much juice as possible.
Stir in the freshly squeezed lemon juice to enhance flavor and preserve color.
Taste the juice and adjust sweetness with honey or agave syrup if desired. Add more cold water for a thinner consistency if needed.
Chill the juice in the refrigerator for 30 minutes or serve immediately over ice cubes.
Pour the juice into glasses and garnish with fresh mint leaves for a beautiful presentation.
