Ingredients
Scale
- 2 medium-sized beets, peeled and chopped
- 2 medium-sized apples, cored and chopped
- 3 medium-sized carrots, peeled and chopped
- 1-inch piece of fresh ginger, peeled
- 1 tablespoon of lemon juice
- 2 cups of cold water
- Ice cubes (optional)
- Fresh mint leaves (for garnish, optional)
Instructions
- Wash all produce thoroughly under running water. Peel the beets and carrots using a vegetable peeler.
- Chop the beets, apples, and carrots into 1-inch chunks for easier processing.
- Peel the ginger using a spoon or peeler and chop it into smaller pieces.
- Set up your juicer or high-speed blender according to the manufacturer’s instructions.
- Feed the chopped beets into the juicer, alternating with apples, carrots, and ginger for smooth processing.
- In a blender, combine the chopped ingredients with 2 cups of cold water. Blend on high speed until smooth, scraping down the sides as needed.
- Strain the blended mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing down on the pulp to extract as much juice as possible.
- Stir in the freshly squeezed lemon juice to enhance flavor and preserve color.
- Taste the juice and adjust sweetness with honey or agave syrup if desired. Add more cold water for a thinner consistency if needed.
- Chill the juice in the refrigerator for 30 minutes or serve immediately over ice cubes.
- Pour the juice into glasses and garnish with fresh mint leaves for a beautiful presentation.
Notes
- Store any leftover juice in an airtight container in the refrigerator and consume within 24-48 hours for optimal freshness.
- For longer storage, freeze juice in ice cube trays and blend frozen cubes with water for a quick smoothie.
