Ingredients

Scale
  • 1 pound of flank steak, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 cup beef broth
  • 2 green onions, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. In a medium bowl, combine the soy sauce and cornstarch. Add the thinly sliced flank steak and mix well to coat. Let marinate for at least 15 minutes (up to 1 hour for deeper flavor).
  2. Slice the onion and both bell peppers into thin strips. Mince the garlic and ginger, and set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated steak in a single layer (cook in batches if necessary) and cook for 2-3 minutes on each side until browned and just cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and bell peppers, stir-frying for 3-4 minutes until they start to soften. Add the minced garlic and ginger, stir-frying for an additional 1-2 minutes until fragrant.
  5. Return the cooked steak to the skillet. In a small bowl, mix together the oyster sauce, rice vinegar, sugar, black pepper, and beef broth. Pour the sauce over the steak and vegetables, stirring to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. Remove from heat and garnish with chopped green onions. Serve hot over a bed of cooked rice.

Notes

  • Slice the flank steak against the grain for tenderness.
  • Customize vegetables as desired; broccoli, snap peas, or carrots are great options.
  • For added heat, consider including sliced jalapeños or chili sauce.
