Instructions

  1. Preheat your oven to 350°F (175°C).

  3. Crack the egg into the bowl and add the vanilla extract. Mix until fully incorporated.
  4. Add the baking soda and salt, folding them into the mixture until just combined.
  5. Cover the bowl with plastic wrap or a kitchen towel and refrigerate for about 30 minutes.
  6. Line a baking sheet with parchment paper.
  7. After chilling, form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, leaving 2 inches of space between each.
  8. Press down in the center of each cookie ball to create a small indentation.
  9. Spoon about 1/2 teaspoon of jelly or jam into each indentation.
  10. Bake for 10-12 minutes, or until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
  12. Move the cookies to a wire rack to cool completely.
