Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest (from about 1 lemon)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- Powdered sugar, for dusting (optional)
- Fresh berries, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the melted butter and granulated sugar. Whisk until well blended and creamy (about 1-2 minutes).
- Add the eggs one at a time, whisking well after each addition.
- Mix in the fresh lemon juice and lemon zest until combined.
- In a separate bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt. Alternatively, add these directly to the wet ingredients and whisk gently to avoid lumps.
- Add the vanilla extract and stir until the batter is smooth and thick but pourable.
- Grease an 8×8 inch baking dish with butter or non-stick spray.
- Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, checking for doneness with a toothpick; it should come out clean or with a few moist crumbs.
- Remove from the oven and let cool in the pan for about 10 minutes.
- Dust the top with powdered sugar for a sweet touch and beautiful presentation.
- Cut into squares or rectangles (about 2-inch squares).
- Serve with fresh berries on the side, such as strawberries, blueberries, or raspberries.
- For an extra treat, add a dollop of whipped cream or a scoop of vanilla ice cream on top.
- Allow the dessert to cool completely before storing to prevent condensation.
- Place squares in an airtight container, separating layers with parchment paper to prevent sticking.
Notes
- This dessert is best enjoyed fresh but can be stored for up to 3 days in an airtight container.
