  • Author: Maria
  • Total Time: 45 minutes
  • Yield: 9 servings 1x

Description

Enjoy a light and fluffy one-bowl lemon dessert that perfectly balances sweetness and tartness. This easy-to-make treat is ideal for any occasion and can be elegantly served with fresh berries or a dusting of powdered sugar.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • Powdered sugar, for dusting (optional)
  • Fresh berries, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the melted butter and granulated sugar. Whisk until well blended and creamy (about 1-2 minutes).
  3. Add the eggs one at a time, whisking well after each addition.
  4. Mix in the fresh lemon juice and lemon zest until combined.
  5. In a separate bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt. Alternatively, add these directly to the wet ingredients and whisk gently to avoid lumps.
  6. Add the vanilla extract and stir until the batter is smooth and thick but pourable.
  7. Grease an 8×8 inch baking dish with butter or non-stick spray.
  8. Pour the batter into the prepared baking dish, spreading it evenly with a spatula.
  9. Bake in the preheated oven for 25-30 minutes, checking for doneness with a toothpick; it should come out clean or with a few moist crumbs.
  10. Remove from the oven and let cool in the pan for about 10 minutes.
  11. Dust the top with powdered sugar for a sweet touch and beautiful presentation.
  12. Cut into squares or rectangles (about 2-inch squares).
  13. Serve with fresh berries on the side, such as strawberries, blueberries, or raspberries.
  14. For an extra treat, add a dollop of whipped cream or a scoop of vanilla ice cream on top.
  15. Allow the dessert to cool completely before storing to prevent condensation.
  16. Place squares in an airtight container, separating layers with parchment paper to prevent sticking.

Notes

  • This dessert is best enjoyed fresh but can be stored for up to 3 days in an airtight container.
  • Feel free to adjust the amount of lemon juice and zest to suit your taste preference.
