Instructions
- In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, cocoa powder, and salt. Stir until well mixed.
- Add the maple syrup and vanilla extract to the dry mixture. Mix until it forms a thick, cohesive dough. Adjust sweetness if desired.
- Roll about a tablespoon of the mixture into a ball, about 1 inch in diameter.
- Place the rolled balls on a parchment-lined baking sheet.
- Refrigerate for about 30 minutes to firm up.
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil.
- Microwave in 30-second intervals, stirring until melted and smooth. Let cool for a minute.
- Dip each chilled ball into the melted chocolate using a fork or toothpick, allowing excess chocolate to drip off.
- Optionally, sprinkle with finely chopped pecans or sea salt before the chocolate sets.
- Repeat until all balls are coated. Reheat chocolate if it thickens.
- Place the baking sheet back in the refrigerator for about 30 minutes, or until the chocolate is completely set.
