Ingredients

Scale
  • 1 cup pecans, finely chopped
  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar
  • 1/2 cup maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for coating)
  • 1 tablespoon coconut oil (for melting chocolate)

Instructions

  1. In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, cocoa powder, and salt. Stir until well mixed.
  2. Add the maple syrup and vanilla extract to the dry mixture. Mix until it forms a thick, cohesive dough. Adjust sweetness if desired.
  3. Roll about a tablespoon of the mixture into a ball, about 1 inch in diameter.
  4. Place the rolled balls on a parchment-lined baking sheet.
  5. Refrigerate for about 30 minutes to firm up.
  6. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil.
  7. Microwave in 30-second intervals, stirring until melted and smooth. Let cool for a minute.
  8. Dip each chilled ball into the melted chocolate using a fork or toothpick, allowing excess chocolate to drip off.
  9. Optionally, sprinkle with finely chopped pecans or sea salt before the chocolate sets.
  10. Repeat until all balls are coated. Reheat chocolate if it thickens.
  11. Place the baking sheet back in the refrigerator for about 30 minutes, or until the chocolate is completely set.

Notes

  • Store the pecan pie balls in an airtight container in the refrigerator for up to a week.
  • Feel free to customize the coating with different toppings like crushed nuts or sprinkles.
