- 2 packages (3.4 oz each) instant vanilla pudding mix
- 4 cups cold milk
- 1 container (8 oz) whipped topping, thawed
- 1 box (14.4 oz) graham crackers
- 1 cup semi-sweet chocolate chips
- 1/4 cup unsalted butter
- 1/4 cup milk
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, combine the two packages of instant vanilla pudding mix with 4 cups of cold milk. Using a whisk, mix them together until the pudding is smooth and well combined. This should take about 2 minutes.
- Once the pudding has thickened, gently fold in the thawed whipped topping. Make sure to do this carefully to keep the mixture light and fluffy.
- Grab a 9×13 inch baking dish. Begin by placing a single layer of graham crackers at the bottom of the dish.
- Spread half of the pudding mixture over the layer of graham crackers, using a spatula to evenly distribute it.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining pudding mixture over this second layer of graham crackers.
- Finish with a final layer of graham crackers on top.
- In a small saucepan, combine 1 cup of semi-sweet chocolate chips, 1/4 cup of unsalted butter, and 1/4 cup of milk. Place the saucepan over low heat.
- Stir continuously until the chocolate chips and butter are completely melted and the mixture is smooth.
- Remove from heat and stir in 1 cup of powdered sugar and 1 teaspoon of vanilla extract until smooth. Adjust consistency with more milk if needed.
- Pour the chocolate topping over the final layer of graham crackers, spreading it evenly.
- Cover the baking dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, preferably overnight.
- When ready to serve, cut into squares or rectangles.
- Garnish with a dollop of whipped topping or chocolate shavings if desired.
