  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 1 cup pancake mix
  • 1 cup water
  • 1/4 cup maple syrup
  • 1/2 cup mini chocolate chips (optional)
  • Butter or cooking spray for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the breakfast sausage. Use a spatula to break it up into small pieces as it cooks.
  3. Cook the sausage until it’s browned and fully cooked, about 8-10 minutes. Stir occasionally to prevent sticking.
  4. Drain any excess grease and set the sausage aside in a bowl. Let it cool slightly.
  5. In a large mixing bowl, crack the 8 large eggs and whisk until well combined.
  6. Add in the milk, salt, black pepper, garlic powder, and onion powder. Whisk again until fully incorporated.
  7. Stir in the cooked sausage and shredded cheddar cheese until evenly distributed.
  8. In a separate bowl, combine the pancake mix with water. Stir until just combined; a few lumps are okay.
  9. Mix in the maple syrup for sweetness.
  10. Optionally, fold in mini chocolate chips for a sweet surprise.
  11. Grease a 9×13 inch baking dish with butter or cooking spray.
  12. Pour the egg and sausage mixture into the dish, spreading it out evenly.
  13. Gently pour the pancake batter over the egg mixture, spreading it out evenly.
  14. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  15. If the top browns too quickly, cover it loosely with aluminum foil.
  16. Once baked, let it cool for about 10 minutes before slicing.
  17. Slice into squares and serve warm, drizzling additional maple syrup on top if desired.
  18. Pair with fresh fruit or crispy bacon for a complete breakfast.
