- 1 cup water
- 1/4 cup maple syrup

- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the breakfast sausage. Use a spatula to break it up into small pieces as it cooks.

- Drain any excess grease and set the sausage aside in a bowl. Let it cool slightly.
- In a large mixing bowl, crack the 8 large eggs and whisk until well combined.
- Add in the milk, salt, black pepper, garlic powder, and onion powder. Whisk again until fully incorporated.
- Stir in the cooked sausage and shredded cheddar cheese until evenly distributed.
- In a separate bowl, combine the pancake mix with water. Stir until just combined; a few lumps are okay.
- Mix in the maple syrup for sweetness.
- Optionally, fold in mini chocolate chips for a sweet surprise.
- Grease a 9×13 inch baking dish with butter or cooking spray.
- Pour the egg and sausage mixture into the dish, spreading it out evenly.
- Gently pour the pancake batter over the egg mixture, spreading it out evenly.
- Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- If the top browns too quickly, cover it loosely with aluminum foil.
