Garlic Butter Chicken Bites: A Delicious and Easy Recipe for Dinner

Tender garlic butter chicken bites, seasoned with Italian herbs and a splash of lemon, create a quick and flavorful dish. Perfectly cooked and garnished with fresh parsley, these bites are great with rice, pasta, or steamed vegetables.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Juice of 1 lemon
  • Optional: 1/4 teaspoon red pepper flakes (for a spicy kick)

Instructions

  1. Prep the Chicken: Trim any excess fat from the chicken breasts and cut them into uniform 1-inch cubes.
  2. Season the Chicken: In a large bowl, season the chicken pieces with salt, pepper, paprika, and dried Italian herbs. Mix well to coat evenly. If desired, add red pepper flakes for heat.
  3. Melt the Butter: In a large skillet, melt the unsalted butter over medium heat until bubbling but not browning.
  4. Add the Garlic: Sauté the minced garlic in the melted butter for 1-2 minutes until fragrant, being careful not to burn it.
  5. Combine with Lemon Juice: Squeeze in the juice of one lemon and stir to combine. Let it simmer for another minute.
  6. Add the Chicken: Add the seasoned chicken pieces to the skillet in a single layer.
  7. Cook the Chicken: Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  8. Baste the Chicken: Spoon some of the garlic butter sauce over the chicken as it cooks to keep it moist and flavorful.
  9. Taste and Adjust Seasoning: Once cooked, taste the chicken and adjust seasoning with more salt, pepper, or lemon juice if desired.
  10. Garnish and Serve: Remove from heat and sprinkle with chopped fresh parsley. Serve immediately.

Notes

  • For a healthier option, serve with steamed vegetables like broccoli or green beans.
  • This dish pairs well with rice or pasta, allowing you to drizzle the garlic butter sauce over the sides.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of chicken broth or water to keep moist.
