Description
Tender garlic butter chicken bites, seasoned with Italian herbs and a splash of lemon, create a quick and flavorful dish. Perfectly cooked and garnished with fresh parsley, these bites are great with rice, pasta, or steamed vegetables.
Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
- Juice of 1 lemon
- Optional: 1/4 teaspoon red pepper flakes (for a spicy kick)
Instructions
- Prep the Chicken: Trim any excess fat from the chicken breasts and cut them into uniform 1-inch cubes.
- Season the Chicken: In a large bowl, season the chicken pieces with salt, pepper, paprika, and dried Italian herbs. Mix well to coat evenly. If desired, add red pepper flakes for heat.
- Melt the Butter: In a large skillet, melt the unsalted butter over medium heat until bubbling but not browning.
- Add the Garlic: Sauté the minced garlic in the melted butter for 1-2 minutes until fragrant, being careful not to burn it.
- Combine with Lemon Juice: Squeeze in the juice of one lemon and stir to combine. Let it simmer for another minute.
- Add the Chicken: Add the seasoned chicken pieces to the skillet in a single layer.
- Cook the Chicken: Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
- Baste the Chicken: Spoon some of the garlic butter sauce over the chicken as it cooks to keep it moist and flavorful.
- Taste and Adjust Seasoning: Once cooked, taste the chicken and adjust seasoning with more salt, pepper, or lemon juice if desired.
- Garnish and Serve: Remove from heat and sprinkle with chopped fresh parsley. Serve immediately.
Notes
- For a healthier option, serve with steamed vegetables like broccoli or green beans.
- This dish pairs well with rice or pasta, allowing you to drizzle the garlic butter sauce over the sides.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of chicken broth or water to keep moist.
