Egg Fried Rice: A Quick and Delicious Recipe for Every Occasion

This Egg Fried Rice is a quick and tasty dish featuring fluffy scrambled eggs, vibrant mixed vegetables, and perfectly cooked rice, all seasoned with savory soy sauce. It’s perfect for using leftover rice and can be customized to suit your taste, making it a great main dish or side.

  • 2 cups of cooked rice
  • 2 large eggs
  • 1 cup of mixed vegetables (carrots, peas, corn, bell peppers)
  • 3 tablespoons of soy sauce
  • 2 tablespoons of vegetable oil (or sesame oil)
  • 2 green onions, finely chopped
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Optional: 1 teaspoon of sesame seeds for garnish

Instructions

  1. Cook your rice according to package instructions. For the best fried rice, use day-old rice or let freshly cooked rice cool for about 30 minutes.
  2. Chop your mixed vegetables into small, uniform pieces.
  3. Crack the eggs into a bowl and whisk them until fully combined.
  4. Mince the garlic cloves finely.
  5. Slice the green onions, separating the white parts from the green tops.
  6. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  7. Add the minced garlic and the white parts of the green onions to the hot oil and sauté for about 30 seconds.
  8. Toss in the chopped mixed vegetables and stir-fry for about 2-3 minutes.
  9. Push the vegetables to one side of the skillet, pour the whisked eggs into the empty side, and scramble them until fully cooked.
  10. Add the cooked rice to the skillet, breaking up any clumps, and stir everything together.
  11. Pour the soy sauce over the rice mixture, starting with 2 tablespoons, and season with salt and pepper as needed.
  12. Continue to stir-fry the rice for another 3-5 minutes.
  13. Taste your fried rice and adjust the flavor with more soy sauce or salt if needed.
  14. Remove the skillet from heat and sprinkle the green tops of the green onions over the fried rice.
  15. Transfer the egg fried rice to a serving bowl or individual plates and enjoy!
