Ingredients

Scale
  • 2 medium-sized cucumbers
  • 4 stalks of celery
  • 1 green apple
  • 1 lemon
  • 1-inch piece of ginger
  • 1 cup of spinach
  • 1 cup of kale
  • 1 tablespoon of chia seeds (optional)
  • 4 cups of filtered water
  • Ice cubes (optional)

Instructions

  1. Wash the Vegetables and Fruits: Thoroughly wash all vegetables and fruits under cold running water using a vegetable brush for cucumbers and apples.
  2. Chop the Ingredients:
    • Slice cucumbers into quarters.
    • Cut celery stalks into 2-3 inch pieces.
    • Core the green apple and cut into wedges (skin on for added nutrients).
    • Peel the lemon and ginger.
    • Rinse spinach and kale leaves and pat dry.
  3. Prepare the Chia Seeds: Soak chia seeds in a small bowl with a bit of water for 10-15 minutes until they expand.
  4. Juicing the Ingredients:
    • If using a juicer, add cucumbers, celery, green apple, lemon, ginger, spinach, and kale in that order.
    • If using a blender, combine all chopped ingredients with filtered water and blend until smooth.
  5. Straining the Juice (if using a blender): Strain the blended mixture through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing down to extract as much juice as possible. Discard the pulp.
  6. Mixing in Chia Seeds: Stir in the soaked chia seeds for added texture and health benefits.
  7. Taste and Adjust: Taste the juice and adjust sweetness with honey or agave syrup if desired. Add more filtered water for a thinner consistency.
  8. Chill the Juice: Serve over ice or refrigerate for 30 minutes to enhance flavors.
  9. Pour and Garnish: Pour into glasses and garnish with a slice of lemon or cucumber, or sprinkle chia seeds on top.
