  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 pre-made pie crust (or homemade if you prefer)
  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  2. Drain any excess fat from the skillet.
  3. Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.
  4. Stir in the diced tomatoes, frozen mixed vegetables, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well and let simmer for 5-10 minutes.
  5. Remove from heat and set aside to cool slightly.
  6. In a mixing bowl, combine the flour, baking powder, and a pinch of salt. Whisk until well combined.
  7. In another bowl, beat the eggs and add the milk. Whisk until blended.
  8. Pour the egg and milk mixture into the dry ingredients. Stir until just combined, being careful not to overmix.
  9. Preheat your oven to 375°F (190°C).
  10. Place the pre-made pie crust in a 9-inch pie dish.
  11. Spread the beef and vegetable mixture evenly over the pie crust.
  12. Sprinkle the shredded cheddar cheese over the filling.
  13. Pour the batter over the top of the cheese and filling, spreading it evenly.
  14. Place the assembled pie in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  15. Remove from the oven and let cool for 10-15 minutes before slicing.
  16. Slice the pie into wedges (aim for 8 slices).
