  • 4 cups cornflakes
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional, such as almonds or walnuts)
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. In a large mixing bowl, measure out 4 cups of cornflakes. Set aside.
  2. In a medium saucepan, combine 1/2 cup of light corn syrup, 1/2 cup of granulated sugar, and 1/4 cup of unsalted butter. Place over medium heat.
  3. Stir continuously until the butter melts and the sugar dissolves, about 3-5 minutes. Avoid boiling.
  4. Remove from heat and add 1 teaspoon of vanilla extract and 1/4 teaspoon of salt. Stir to combine.
  5. Sift in 1/2 cup of unsweetened cocoa powder and stir until smooth.
  6. Add 1 cup of semi-sweet chocolate chips and stir until melted and glossy.
  7. Pour the chocolate mixture over the cornflakes slowly to avoid crushing them.
  8. Gently fold the chocolate mixture into the cornflakes with a spatula or wooden spoon for 2-3 minutes.
  9. If desired, fold in 1/2 cup of chopped nuts and/or 1/2 cup of mini marshmallows.
  10. Line a baking dish or large sheet pan with parchment paper.
  11. Transfer the cornflake mixture into the prepared dish and spread it evenly.
  12. Press the mixture down firmly with greased hands to compact it.
  13. Let cool at room temperature for about 30 minutes or refrigerate for 15 minutes.
  14. Once firm, lift the mixture out using the parchment paper and place it on a cutting board.
  15. Cut into squares or rectangles, about 2 inches in size.
  16. Serve on a platter or store in an airtight container at room temperature for up to a week.
