Enjoy a refreshing Watermelon Mint Cooler this summer, blending hydrating watermelon, tropical coconut water, zesty lime, and fresh mint. Perfect for hot days, this nutrient-packed drink is both delicious and revitalizing.

- 4 cups of fresh watermelon, cubed
- 1 cup of coconut water
- 1/2 cup of fresh mint leaves
- 2 tablespoons of lime juice (freshly squeezed)
- 1 tablespoon of honey or agave syrup (optional, adjust to taste)

- Mint sprigs for garnish
- Lime slices for garnish
Instructions
- Start by cutting the watermelon into manageable chunks. Slice it in half and then cut each half into smaller pieces for easier cubing.
- Place the cubed watermelon in a high-speed blender and blend on high until completely smooth (about 30 seconds to a minute).
- If desired, strain the juice through a fine mesh sieve or cheesecloth for a smoother texture. Otherwise, set the juice aside in a large pitcher (you should have about 3 cups).
- In the pitcher with the watermelon juice, add 1 cup of coconut water.
- Add 2 tablespoons of freshly squeezed lime juice to balance the sweetness.
- If you prefer a sweeter drink, add 1 tablespoon of honey or agave syrup, adjusting to taste.
- Toss in 1/2 cup of fresh mint leaves for a refreshing aroma and flavor.
- Use a hand blender to blend the mixture until the mint leaves are finely chopped and everything is well combined. Alternatively, transfer back to a regular blender and blend for 15-20 seconds.
- Taste the mixture and adjust sweetness or acidity as needed.
- Chill the mixture in the refrigerator for at least 30 minutes to allow flavors to meld.
- Fill tall glasses with ice cubes.
- Pour the chilled watermelon mixture over the ice, filling each glass about three-quarters full.
- Garnish each glass with a sprig of fresh mint and a slice of lime on the rim.
- Serve immediately and enjoy the refreshing taste of summer! This drink can be stored in the fridge for up to 3 days.
