  • 4 cups of fresh watermelon, cubed
  • 1 cup of coconut water
  • 1/2 cup of fresh mint leaves
  • 2 tablespoons of lime juice (freshly squeezed)
  • 1 tablespoon of honey or agave syrup (optional, adjust to taste)
  • Ice cubes
  • Mint sprigs for garnish
  • Lime slices for garnish

Instructions

  1. Start by cutting the watermelon into manageable chunks. Slice it in half and then cut each half into smaller pieces for easier cubing.
  2. Place the cubed watermelon in a high-speed blender and blend on high until completely smooth (about 30 seconds to a minute).
  3. If desired, strain the juice through a fine mesh sieve or cheesecloth for a smoother texture. Otherwise, set the juice aside in a large pitcher (you should have about 3 cups).
  4. In the pitcher with the watermelon juice, add 1 cup of coconut water.
  5. Add 2 tablespoons of freshly squeezed lime juice to balance the sweetness.
  6. If you prefer a sweeter drink, add 1 tablespoon of honey or agave syrup, adjusting to taste.
  7. Toss in 1/2 cup of fresh mint leaves for a refreshing aroma and flavor.
  8. Use a hand blender to blend the mixture until the mint leaves are finely chopped and everything is well combined. Alternatively, transfer back to a regular blender and blend for 15-20 seconds.
  9. Taste the mixture and adjust sweetness or acidity as needed.
  10. Chill the mixture in the refrigerator for at least 30 minutes to allow flavors to meld.
  11. Fill tall glasses with ice cubes.
  12. Pour the chilled watermelon mixture over the ice, filling each glass about three-quarters full.
  13. Garnish each glass with a sprig of fresh mint and a slice of lime on the rim.
  14. Serve immediately and enjoy the refreshing taste of summer! This drink can be stored in the fridge for up to 3 days.
