- Flour, for dusting

Instructions
- In a small saucepan, combine the heavy cream and chocolate chips over medium heat. Stir continuously until the chocolate is completely melted and the mixture is smooth (about 3-5 minutes). Avoid boiling.
- Remove from heat and stir in the powdered sugar and vanilla extract until glossy. Set aside to cool slightly.
- Preheat your oven to 400°F (200°C).
- On a floured surface, unfold one sheet of puff pastry and roll it out to about 1/8 inch thick.
- Cut the pastry into 4-inch squares. Repeat with the second sheet.
- Place a tablespoon of chocolate filling in the center of each square, being careful not to overfill.
- Fold each square into a triangle by bringing one corner over to the opposite corner. Press edges to seal and crimp with a fork if desired.
- Place the pastries on a parchment-lined baking sheet, leaving space between each.
- Brush the tops with the beaten egg and sprinkle with powdered sugar if desired.
- Bake in the preheated oven for 15-20 minutes, or until puffed and golden brown. Keep an eye on them as baking times may vary.
- Let cool on the baking sheet for about 5 minutes.
