These Chicken Wonton Tacos combine savory ground chicken in crispy wonton shells, topped with fresh veggies and a squeeze of lime. Perfect for a fun and delicious meal any time!

- 1 pound ground chicken
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 cup shredded carrots
- 1 cup chopped green onions
- 1 cup chopped bell peppers (any color)
- 1 package of wonton wrappers (about 50 wrappers)
- 1 cup shredded lettuce
- 1 avocado, sliced
- 1/2 cup cilantro, chopped
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and ginger. Sauté for about 1-2 minutes until fragrant, being careful not to burn them.
- Add the ground chicken to the skillet. Use a spatula to break it apart as it cooks. Cook for about 5-7 minutes, or until the chicken is no longer pink and cooked through.
- Stir in the soy sauce, hoisin sauce, and sesame oil. Mix well to ensure the chicken is evenly coated with the sauces.
- Add the shredded carrots, chopped green onions, and bell peppers to the skillet. Stir everything together and cook for an additional 3-4 minutes until the vegetables are tender but still crisp. Season with salt and pepper to taste.
- Preheat your oven to 375°F (190°C).
- Lightly grease a muffin tin with cooking spray or olive oil.
- Take one wonton wrapper and gently press it into the muffin tin, forming a cup shape. Repeat until all wrappers are in the tin (about 12 wrappers per standard muffin tin).
- Lightly brush or spray the tops of the wonton wrappers with olive oil.
- Bake in the preheated oven for about 8-10 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning!
- Once the wonton wrappers are out of the oven and cooled slightly, fill each cup with the chicken mixture using a spoon, being careful not to overfill.
- Top each taco with a handful of shredded lettuce for crunch.
- Add a few slices of avocado on top of the lettuce.
- Sprinkle chopped cilantro over the top for added flavor.
- Serve with lime wedges on the side for a zesty kick.
