Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 cup shredded carrots
  • 1 cup chopped green onions
  • 1 cup chopped bell peppers (any color)
  • 1 package of wonton wrappers (about 50 wrappers)
  • 1 cup shredded lettuce
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and ginger. Sauté for about 1-2 minutes until fragrant, being careful not to burn them.
  2. Add the ground chicken to the skillet. Use a spatula to break it apart as it cooks. Cook for about 5-7 minutes, or until the chicken is no longer pink and cooked through.
  3. Stir in the soy sauce, hoisin sauce, and sesame oil. Mix well to ensure the chicken is evenly coated with the sauces.
  4. Add the shredded carrots, chopped green onions, and bell peppers to the skillet. Stir everything together and cook for an additional 3-4 minutes until the vegetables are tender but still crisp. Season with salt and pepper to taste.
  5. Preheat your oven to 375°F (190°C).
  6. Lightly grease a muffin tin with cooking spray or olive oil.
  7. Take one wonton wrapper and gently press it into the muffin tin, forming a cup shape. Repeat until all wrappers are in the tin (about 12 wrappers per standard muffin tin).
  8. Lightly brush or spray the tops of the wonton wrappers with olive oil.
  9. Bake in the preheated oven for about 8-10 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning!
  10. Once the wonton wrappers are out of the oven and cooled slightly, fill each cup with the chicken mixture using a spoon, being careful not to overfill.
  11. Top each taco with a handful of shredded lettuce for crunch.
  12. Add a few slices of avocado on top of the lettuce.
  13. Sprinkle chopped cilantro over the top for added flavor.
  14. Serve with lime wedges on the side for a zesty kick.
