- 4 large boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 tablespoon olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between two sheets of plastic wrap or parchment paper. Pound to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt, pepper, oregano, and basil.
- In a medium bowl, mix ricotta, mozzarella, Parmesan, spinach, garlic, and a pinch of salt and pepper until creamy.
- Taste the filling and adjust seasoning as needed.
- Lay a chicken breast flat and spoon 2-3 tablespoons of filling onto the center.
- Roll the chicken breast over the filling, tucking in the sides. Secure with toothpicks or kitchen twine if necessary.
- Continue with the remaining chicken breasts.
- Spread a thin layer of marinara sauce on the bottom of a large baking dish.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken rollatini seam side down for 3-4 minutes until golden brown.
- Place the seared chicken in the baking dish seam side down.
- Pour remaining marinara sauce over the chicken and sprinkle with additional mozzarella and Parmesan.
- Cover with aluminum foil and bake for 25 minutes.
- Remove foil and bake for an additional 15-20 minutes until chicken is cooked through (165°F or 74°C) and cheese is bubbly.
- Remove from oven and let rest for 5-10 minutes.
- Remove toothpicks or twine, slice into thick pieces, and arrange on a platter.
- Garnish with fresh basil leaves if desired.
- Serve warm with pasta, salad, or crusty bread.
