  • 4 large boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts between two sheets of plastic wrap or parchment paper. Pound to an even thickness of about 1/2 inch.
  3. Season both sides of the chicken breasts with salt, pepper, oregano, and basil.
  4. In a medium bowl, mix ricotta, mozzarella, Parmesan, spinach, garlic, and a pinch of salt and pepper until creamy.
  5. Taste the filling and adjust seasoning as needed.
  6. Lay a chicken breast flat and spoon 2-3 tablespoons of filling onto the center.
  7. Roll the chicken breast over the filling, tucking in the sides. Secure with toothpicks or kitchen twine if necessary.
  8. Continue with the remaining chicken breasts.
  9. Spread a thin layer of marinara sauce on the bottom of a large baking dish.
  10. Heat olive oil in a skillet over medium-high heat. Sear the chicken rollatini seam side down for 3-4 minutes until golden brown.
  11. Place the seared chicken in the baking dish seam side down.
  12. Pour remaining marinara sauce over the chicken and sprinkle with additional mozzarella and Parmesan.
  13. Cover with aluminum foil and bake for 25 minutes.
  14. Remove foil and bake for an additional 15-20 minutes until chicken is cooked through (165°F or 74°C) and cheese is bubbly.
  15. Remove from oven and let rest for 5-10 minutes.
  16. Remove toothpicks or twine, slice into thick pieces, and arrange on a platter.
  17. Garnish with fresh basil leaves if desired.
  18. Serve warm with pasta, salad, or crusty bread.
