1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups semi-sweet chocolate chunks
1 cup chopped nuts (optional, walnuts or pecans recommended)
Instructions
Gather all ingredients and tools: a large mixing bowl, whisk, spatula, and a 9×13 inch baking pan. Preheat your oven to 350°F (175°C).
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract until smooth and creamy.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Switch to a spatula to gently fold in the flour.
Fold in the chocolate chunks and nuts (if using), reserving a handful of chocolate chunks for topping.
Line the bottom of the 9×13 inch baking pan with parchment paper, leaving overhang on the sides.
Lightly grease the parchment paper with cooking spray or butter.
Pour the cookie batter into the prepared baking pan, spreading it evenly with a spatula.
Sprinkle the reserved chocolate chunks on top.
Bake in the preheated oven for 25-30 minutes, checking at the 25-minute mark. The cookie bars are done when the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
Remove from the oven and let cool in the pan for 10-15 minutes.
Using the parchment paper overhang, lift the cookie bars out of the pan onto a cutting board.
