4 boneless, skinless chicken breasts
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
4 large flour tortillas
4 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup fresh spinach leaves
1 medium tomato, diced
1/2 cup ranch dressing (optional)
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
Pound the chicken breasts to an even thickness on a cutting board.
In a small bowl, mix minced garlic, olive oil, Italian seasoning, salt, and pepper.
Rub the garlic oil mixture over the chicken breasts and let marinate for 10-15 minutes.
Place marinated chicken on a parchment-lined baking sheet.
Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
Let the chicken rest for 5 minutes, then slice into thin strips.
Lay out the tortillas on a clean surface.
Sprinkle shredded mozzarella and cheddar cheese on each tortilla.
Add fresh spinach leaves on top of the cheese.
Distribute the sliced chicken evenly among the tortillas.
Drizzle ranch dressing over the chicken if desired.
Fold in the sides of the tortilla over the filling, then roll tightly from the bottom.
Place the wraps seam-side down on a plate.
Heat a tablespoon of olive oil in a large skillet over medium heat.
Place the wraps seam-side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
Remove from the skillet and let cool for a minute before slicing diagonally.
