Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente. Stir occasionally to prevent sticking.
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the pasta and set it aside without rinsing.
  5. In a large skillet, heat olive oil and butter over medium heat.
  6. Add sliced onions to the skillet and stir to coat with oil and butter.
  7. Sprinkle a pinch of salt and sugar over the onions.
  8. Reduce heat to medium-low and cook onions for 30-40 minutes, stirring every 5-10 minutes until golden brown and soft.
  9. Stir in minced garlic and thyme, cooking for an additional 2-3 minutes.
  10. Pour in broth to deglaze the pan, scraping up any bits. Let simmer for 5 minutes.
  11. Stir in heavy cream and simmer for another 5 minutes until slightly thickened.
  12. Add grated Parmesan cheese, stirring until melted. Adjust consistency with reserved pasta water if needed.
  13. Toss the drained pasta into the skillet with the sauce, coating evenly.
  14. Taste and adjust seasoning with salt and pepper as needed.
  15. Serve hot, garnished with additional Parmesan cheese and chopped parsley.
