  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine pasta and cook according to package instructions (8-10 minutes) until al dente.
  3. Reserve about 1 cup of pasta water, then drain and set aside.
  4. In a large bowl, combine shrimp and scallops.
  5. Sprinkle Cajun seasoning over the seafood, ensuring each piece is well-coated.
  6. Let sit for about 10 minutes.
  7. In a large skillet, heat olive oil over medium-high heat.
  8. Add the seasoned shrimp and scallops, cooking for 3-4 minutes on each side until opaque.
  9. Remove from skillet and set aside.
  10. In the same skillet, reduce heat to medium and add minced garlic.
  11. Sauté for 1 minute until fragrant.
  12. Pour in chicken broth and simmer for 2-3 minutes.
  13. Add heavy cream, stirring to combine, and let simmer for 3-4 minutes until slightly thickened.
  14. Gradually whisk in Parmesan cheese until melted and creamy.
  15. Stir in lemon juice and season with salt and pepper to taste.
  16. Add cooked fettuccine to the skillet, tossing to coat in the sauce.
  17. Gently fold in cooked shrimp and scallops.
  18. If the dish seems dry, add reserved pasta water to achieve desired creaminess.
  19. Remove from heat and serve immediately, garnished with chopped parsley.
  20. Optionally, sprinkle additional Parmesan cheese on top before serving.

Notes

  • For extra spice, add more Cajun seasoning or a dash of hot sauce.
  • Substitute shrimp and scallops with crab or lobster, or add vegetables like bell peppers or spinach for added nutrition.
  • Always taste the sauce before serving to adjust seasoning as needed.
