  • 1/4 cup cream soda
  • 1/4 cup unsalted butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

Instructions

  1. In a medium saucepan, combine the heavy cream, whole milk, brown sugar, granulated sugar, and salt. Stir over medium heat until the sugars dissolve completely (about 5 minutes). Do not let it boil!
  2. Remove from heat and add the vanilla extract, butterscotch sauce, and spices (cinnamon, nutmeg, and ginger). Stir well to combine.
  3. Allow the mixture to cool to room temperature (about 30 minutes) before transferring it to a large bowl.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or overnight for best flavor melding.
  5. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, see the no-churn method below.
  6. Churn for 20-25 minutes until it reaches a soft-serve consistency. Slowly add the cream soda while the machine is running and mix for another minute.
  7. Transfer the churned ice cream to a freezer-safe container, smoothing the top with a spatula.
  8. Cover the container and freeze for at least 4 hours, or until firm (overnight is best).
  9. Let the ice cream sit at room temperature for 5-10 minutes before scooping.
  10. Serve in bowls or cones, drizzled with extra butterscotch sauce. Optionally, top with whipped cream and a sprinkle of cinnamon for a beautiful presentation.
