Ingredients

Scale
  • 1 French baguette or Italian bread, sliced into 1/2-inch pieces
  • 2 cups cherry tomatoes, diced
  • 1/2 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the diced cherry tomatoes and chopped basil leaves.
  2. Add the minced garlic to the bowl.
  3. Pour in the balsamic vinegar and extra virgin olive oil.
  4. Sprinkle in the salt and black pepper. Mix everything together gently until well combined. Set aside.
  5. In a large mixing bowl, add the softened cream cheese.
  6. Using a hand mixer or spatula, beat the cream cheese until smooth and creamy (about 1-2 minutes).
  7. Add the shredded mozzarella cheese and grated Parmesan cheese to the bowl.
  8. If using, sprinkle in the Italian seasoning. Mix until well combined.
  9. In a serving dish, spread the creamy cheese mixture evenly across the bottom.
  10. Spoon the tomato mixture over the cream cheese layer, distributing it evenly.
  11. Drizzle a little more balsamic vinegar or olive oil over the top if desired.
  12. Garnish with any leftover basil.
  13. Preheat your oven to 400°F (200°C).
  14. Arrange the sliced baguette pieces on a baking sheet in a single layer.
  15. Brush each slice lightly with olive oil.
  16. Bake for about 8-10 minutes, or until the bread is golden brown and crispy.

  • For a more robust garlic flavor, feel free to add extra cloves.
