Instructions
- In a medium-sized mixing bowl, combine the diced cherry tomatoes and chopped basil leaves.
- Add the minced garlic to the bowl.
- Pour in the balsamic vinegar and extra virgin olive oil.
- Sprinkle in the salt and black pepper. Mix everything together gently until well combined. Set aside.
- In a large mixing bowl, add the softened cream cheese.
- Using a hand mixer or spatula, beat the cream cheese until smooth and creamy (about 1-2 minutes).
- Add the shredded mozzarella cheese and grated Parmesan cheese to the bowl.
- If using, sprinkle in the Italian seasoning. Mix until well combined.
- In a serving dish, spread the creamy cheese mixture evenly across the bottom.
- Spoon the tomato mixture over the cream cheese layer, distributing it evenly.
- Drizzle a little more balsamic vinegar or olive oil over the top if desired.
- Garnish with any leftover basil.
