- 1 cup shredded cheddar cheese

- 2 large eggs

- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- 1 tablespoon olive oil (for frying)
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the broccoli florets thoroughly under cold water to remove any dirt or pesticides.
- Chop the broccoli into small, bite-sized pieces.
- Bring a pot of water to a boil and add a pinch of salt.
- Add the chopped broccoli to the boiling water and blanch for about 2-3 minutes.
- Drain the broccoli in a colander and transfer it to a bowl of ice water to stop the cooking process.
- Once cooled, drain the broccoli again and pat it dry with a clean kitchen towel.
- In a large mixing bowl, combine the blanched broccoli, shredded cheddar cheese, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, salt, black pepper, and paprika (if using).
- Crack the two large eggs into the bowl and mix everything together using a spatula or your hands until well combined.
- Let the mixture sit for about 10 minutes to allow the breadcrumbs to absorb moisture.
- Shape the mixture into patties, about 1/2 inch thick and 3 inches in diameter.
- Place the formed patties on a plate or a baking sheet lined with parchment paper.
- Repeat until all the mixture is shaped into patties (about 10-12 patties).
- Heat a large skillet over medium heat and add the olive oil.
- Place the patties in the skillet, cooking in batches of 4-5 at a time.
- Cook for about 4-5 minutes on one side until golden brown and crispy.
- Flip the patties and cook for another 4-5 minutes on the other side.
- Transfer the cooked patties to a plate lined with paper towels to absorb excess oil.
- Prepare any sides or dips to serve with the patties.
- Place the broccoli cheese patties on a serving platter and garnish with freshly chopped parsley.
- Serve warm or at room temperature.
