Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup buttermilk
  • 1 pound thinly sliced roast beef
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 cup sliced provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk until well mixed.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Pour in the buttermilk and gently mix until just combined. If the dough feels too dry, add a splash more buttermilk.
  6. Turn the dough out onto a lightly floured surface. Gently knead a few times until it comes together.
  7. Pat the dough into a rectangle about 1-inch thick. Cut into squares or rectangles to yield about 12 biscuits.
  8. Place the cut biscuits onto a baking sheet lined with parchment paper, leaving space between each.
  9. Bake for 12-15 minutes, or until golden brown on top.
  10. While the biscuits bake, prepare the filling. In a medium saucepan, combine beef broth, Worcestershire sauce, garlic powder, and onion powder. Bring to a simmer over medium heat.
  11. Add the sliced roast beef, stirring gently to coat. Simmer for 5-7 minutes until heated through.
  12. Remove the biscuits from the oven and let cool for a few minutes.
  13. Prepare a small bowl for the dipping sauce with the remaining beef broth mixture.
  14. Slice each biscuit in half horizontally.
  15. On the bottom half, place a generous amount of the warm roast beef mixture, including some broth.
  16. Top with a slice of provolone cheese, allowing it to melt slightly.
  17. Place the top half of the biscuit back on. Optionally, return to the oven for a minute to melt the cheese further.
  18. Arrange the assembled biscuits on a serving platter and garnish with freshly chopped parsley.

Notes

  • For extra flavor, consider adding sautéed onions or peppers to the roast beef mixture.
  • These biscuits are best served warm and can be reheated in the oven if needed.
