- 1/2 cup whole almonds
- 1 cup dark chocolate chips (dairy-free if desired)
- 1 tablespoon coconut oil (for chocolate coating)
Instructions
- In a large mixing bowl, combine the unsweetened shredded coconut and almond flour. Stir until well mixed.
- Add the honey (or maple syrup) to the bowl and mix.
- Pour in the melted coconut oil and mix until combined.
- Add the vanilla extract and salt, mixing until a sticky dough forms.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- After chilling, scoop out about a tablespoon of the mixture and roll it into a ball, then flatten it slightly.
- Place a whole almond in the center of each disc and press gently.
- Place the shaped bites on a parchment-lined baking sheet, spaced apart.
- Refrigerate for another 15-20 minutes.
- In a microwave-safe bowl, combine dark chocolate chips and 1 tablespoon of coconut oil.
- Microwave in 30-second intervals, stirring until melted and smooth.
- Dip each chilled coconut bite into the melted chocolate, letting excess drip off before placing it back on the baking sheet.

- Refrigerate for about 30 minutes to set the chocolate.
