Scale
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup whole almonds
  • 1 cup dark chocolate chips (dairy-free if desired)
  • 1 tablespoon coconut oil (for chocolate coating)

Instructions

  1. In a large mixing bowl, combine the unsweetened shredded coconut and almond flour. Stir until well mixed.
  2. Add the honey (or maple syrup) to the bowl and mix.
  3. Pour in the melted coconut oil and mix until combined.
  4. Add the vanilla extract and salt, mixing until a sticky dough forms.
  5. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  6. After chilling, scoop out about a tablespoon of the mixture and roll it into a ball, then flatten it slightly.
  7. Place a whole almond in the center of each disc and press gently.
  8. Place the shaped bites on a parchment-lined baking sheet, spaced apart.
  9. Refrigerate for another 15-20 minutes.
  10. In a microwave-safe bowl, combine dark chocolate chips and 1 tablespoon of coconut oil.
  11. Microwave in 30-second intervals, stirring until melted and smooth.
  12. Dip each chilled coconut bite into the melted chocolate, letting excess drip off before placing it back on the baking sheet.
  13. Drizzle extra melted chocolate over the top for decoration if desired.
  14. Refrigerate for about 30 minutes to set the chocolate.
  15. Transfer the bites to an airtight container. Store in the refrigerator for up to a week or freeze for longer storage.
  16. Let them sit for a few minutes before enjoying. Perfect for snacks or desserts!
  17. Experiment with toppings like crushed nuts or additional shredded coconut before the chocolate sets.
  18. Enjoy your homemade Almond Joy Coconut Bites!

Notes

  • For a vegan option, use maple syrup instead of honey.
  • Ensure the chocolate is not overheated to prevent burning.
  • Feel free to customize with different toppings for added texture.
