Enjoy a delicious twist on breakfast with these Sausage French Toast Roll-Ups, featuring savory sausages wrapped in sweet, cinnamon-flavored French toast. Crispy on the outside and soft inside, they are perfect for brunch and served warm with maple syrup for a delightful treat.

Ingredients

Scale
  • 8 slices of bread (white or whole wheat)
  • 8 breakfast sausages (links or patties)
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 2 tablespoons butter (for cooking)
  • Maple syrup (for serving)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Cook the breakfast sausages according to the package instructions. Grill or pan-fry links until browned, or cook patties in a skillet over medium heat for 4-5 minutes on each side. Set aside to cool slightly.
  2. Trim the crusts off each slice of bread for easier rolling. Flatten each slice with a rolling pin.
  3. Place one sausage at one end of a slice of bread and roll tightly, tucking in the sides. Repeat for all sausages and bread slices.
  4. In a medium bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until frothy.
  5. In a shallow dish, mix the granulated sugar and an additional teaspoon of ground cinnamon. Dip each roll-up in the egg mixture, allowing excess to drip off.
  6. Melt butter in a large skillet over medium heat. Place roll-ups seam side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy. Turn gently to avoid unrolling.
  7. Remove roll-ups from the skillet and immediately roll in the cinnamon-sugar mixture until well coated.
  8. Arrange the roll-ups on a serving platter. Dust with powdered sugar if desired and serve warm with maple syrup for dipping.

Notes

  • For a cheesy twist, add a slice of cheese inside each roll-up before rolling.
  • Use whole grain bread and turkey sausage for a healthier option.
  • Experiment with spices like nutmeg or cardamom in the egg mixture for unique flavors.
  • These roll-ups can be made ahead and reheated in the oven for a quick breakfast.
