- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 2 large ripe bananas, mashed
- 1 large egg
- ? cup unsalted butter, melted
- 1 teaspoon vanilla extract
- ½ cup Nutella
- ½ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with paper liners or grease it with non-stick spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix the granulated sugar and brown sugar.
- Mash the ripe bananas in a separate bowl until smooth with a few lumps.
- Add the egg, melted butter, and vanilla extract to the mashed bananas and whisk until combined.
- Pour the wet mixture into the dry ingredients and gently fold together, being careful not to overmix.
- Swirl in the Nutella by adding dollops on top of the batter and using a knife to create swirls.
- Fold in chocolate chips if desired.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean or with a few moist crumbs.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- Enjoy warm, optionally spreading more Nutella on top.
- Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
- Thaw frozen muffins at room temperature or microwave for 15-20 seconds to warm.
- Add nuts or substitute half of the flour with whole wheat for a healthier twist.
