2 sirloin steaks (about 6–8 oz each)
Salt & freshly cracked black pepper
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup beef broth (or dry white wine for extra depth)
1 teaspoon Dijon mustard (optional – adds a tangy note)
1/2 teaspoon dried thyme or 1 teaspoon fresh chopped herbs (rosemary, parsley, thyme)
2 tablespoons grated Parmesan (optional for extra richness)

Pat the steaks dry with paper towels.
