This Crockpot Shredded Chicken is the ultimate meal prep MVP — super versatile, tender, and packed with flavor. Use it for tacos, salads, sandwiches, bowls, and more. Just toss it in the slow cooker, set it, and forget it!
(Serves 4–6)
2–3 boneless, skinless chicken breasts (or thighs for extra juiciness)
1/2 cup chicken broth (or water)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
Salt & pepper, to taste
Optional: 1/2 teaspoon dried oregano or Italian seasoning
Optional: Juice of 1/2 lemon (for brightness)
Place chicken breasts in the slow cooker.
Sprinkle the seasonings evenly over the chicken.
Pour in the broth (it helps keep it moist and flavorful).
Add lemon juice or herbs if using.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and easily shreddable with a fork.
Remove chicken and shred using two forks (or a hand mixer for quick shredding!).
Return shredded chicken to the crockpot and toss with juices for max flavor.
