  • 1/2 cup celery, finely chopped
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley or dill, chopped
  • 1/4 cup almonds or walnuts, chopped (optional, for crunch)


Instructions

1. Prepare the Dressing

  1. In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, olive oil, garlic powder, salt, pepper, and honey (if using). Set aside.

2. Assemble the Salad

  1. In a large mixing bowl, combine the cooked chicken, celery, red bell pepper, red onion, and fresh herbs.
