Ingredients

Scale

  • 500 g potatoes, peeled and sliced – The base of the dish, soft and delicious.
  • 300 g pumpkin, diced – Adds a subtle sweetness and a beautiful color.
  • 200 g bacon lardons – For a smoky, salty contrast.
  • 1 onion, finely chopped – Adds depth of flavor.
  • 1 garlic clove, minced – Enhances the richness of the dish.
  • 200 ml heavy cream – Makes the tartiflette creamy and indulgent.
  • 1 Reblochon cheese (or 250 g of another soft, melting cheese like Camembert or Brie) – The heart of the tartiflette.
  • 1 tbsp butter – For extra richness.
  • Salt and pepper, to taste
  • ½ tsp nutmeg (optional) – Complements the pumpkin’s sweetness.

👉 Tip: For a vegetarian version, skip the bacon and add sautéed mushrooms or nuts for extra texture.

Instructions

tep 1: Prepare the Ingredients

  1. Preheat your oven to 200°C (390°F).
  2. Boil the sliced potatoes for 10 minutes until slightly tender but still firm. Drain and set aside.
  3. In a pan, melt the butter and sauté the onions until soft. Add the bacon and cook until crispy. Stir in the garlic and cook for another 30 seconds.

Step 2: Cook the Pumpkin

Step 3: Assemble the Tartiflette

  1. In a baking dish, layer half the potatoes, followed by the pumpkin and bacon mixture. Add the remaining potatoes on top.
  2. Pour the cream evenly over the layers.
  3. Cut the Reblochon cheese in half and place it rind side up on top of the dish.

Step 4: Bake

  1. Bake for 20-25 minutes, until the cheese is melted, bubbly, and slightly golden on top.

Step 5: Serve and Enjoy!

Let it rest for 5 minutes, then serve warm with a fresh green salad or crusty bread.
